Description

A rich and spicy Mexican chocolate cake with a deep cocoa flavor and a hint of cinnamon.


Ingredients

  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, salt, and cinnamon.
  3. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
  4. Stir in boiling water. The batter will be thin.
  5. Pour into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Let cool before serving.

Notes

  • For extra spice, add a pinch of cayenne pepper.
  • Dust with powdered sugar or top with whipped cream.
