A rich and spicy Mexican chocolate cake with a deep cocoa flavor and a hint of cinnamon.
Ingredients

- 2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp ground cinnamon
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, salt, and cinnamon.
- Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
- Stir in boiling water. The batter will be thin.
- Pour into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For extra spice, add a pinch of cayenne pepper.
- Dust with powdered sugar or top with whipped cream.
- Store leftovers in an airtight container for up to 3 days.
