Ingredients

  • 1/4 cup cocoa powder
  • 1/2 cup unsalted butter, chilled
  • 1/4 cup powdered sugar
  • 1 egg yolk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 tbsp unsalted butter
  • 1 tsp sea salt
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, cocoa powder, and powdered sugar in a bowl.
  3. Cut in chilled butter until the mixture resembles crumbs.
  4. Add egg yolk and mix until dough forms.
  5. Press dough into tart molds and bake for 12 minutes.
  6. Heat cream until warm, then pour over chocolate chips. Stir until smooth.
  7. Melt granulated sugar in a pan until amber-colored.
  8. Add butter and cream, then stir in sea salt.
  9. Pour caramel into tart shells, then top with chocolate ganache.
  10. Chill for 2 hours before serving.
