Ingredients

- 200g dark chocolate (70% cocoa)
- 100ml heavy cream
- 50g unsalted butter
- 2 tbsp raspberry jam
- 1 tsp vanilla extract
- 50g cocoa powder (for dusting)
Instructions
- Chop the dark chocolate into small pieces and place in a heatproof bowl.
- Heat the heavy cream and butter in a saucepan until just boiling.
- Pour the hot cream over the chocolate and let it sit for 2 minutes.
- Stir until smooth, then add the raspberry jam and vanilla extract.
- Refrigerate the mixture for 2 hours or until firm.
- Scoop small portions and roll into balls using your hands.
- Coat each truffle in cocoa powder.
- Store in an airtight container in the fridge until ready to serve.

- Use high-quality chocolate for the best flavor.
- If the mixture is too soft, refrigerate longer before rolling.
- For a festive touch, drizzle melted white chocolate on top.
