Description

Ingredients

Scale
  • 200g dark chocolate (70% cocoa)
  • 100ml heavy cream
  • 50g unsalted butter
  • 2 tbsp raspberry jam
  • 1 tsp vanilla extract
  • 50g cocoa powder (for dusting)

Instructions

  1. Chop the dark chocolate into small pieces and place in a heatproof bowl.
  2. Heat the heavy cream and butter in a saucepan until just boiling.
  3. Pour the hot cream over the chocolate and let it sit for 2 minutes.
  4. Stir until smooth, then add the raspberry jam and vanilla extract.
  5. Refrigerate the mixture for 2 hours or until firm.
  6. Scoop small portions and roll into balls using your hands.
  7. Coat each truffle in cocoa powder.
  8. Store in an airtight container in the fridge until ready to serve.
