- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup finely ground coffee beans
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 1 cup heavy cream
- 8 oz semisweet chocolate, melted
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 tsp vanilla extract
- 3 large eggs
- Whipped cream for topping
Instructions
- Preheat oven to 350°F.
- Mix cookie crumbs, ground coffee, sugar, and melted butter. Press into a 9-inch pie dish.
- Bake crust for 10 minutes. Let cool.
- Whip heavy cream until stiff peaks form. Set aside.
- Beat softened butter and sugar until fluffy. Add melted chocolate and vanilla.
- Add eggs one at a time, beating well after each.
- Fold in whipped cream gently.
- Pour filling into cooled crust. Chill for at least 4 hours.
- Top with whipped cream before serving.
