Description

Ingredients

  • 1 1/2 cups grated zucchini
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
  2. In a bowl, mix flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk oil, sugar, eggs, and vanilla until smooth.
  4. Stir in grated zucchini.
  5. Combine wet and dry ingredients, mixing until just blended. Fold in chocolate chips.
  6. Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
