Ingredients

- 1 1/2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1/2 cup unsalted butter, chilled
- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1 large egg yolk
- 2 tbsp ice water
- 1 1/4 cups heavy cream
- 8 oz dark chocolate, chopped
- 1/4 tsp sea salt
Instructions
- Preheat oven to 350°F (175°C).
- Combine flour, cocoa powder, sugar, and salt in a bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Add egg yolk and ice water, mix until dough forms.
- Press dough into a tart pan and chill for 30 minutes.
- Bake for 15 minutes until firm. Let cool.
- Heat cream until simmering, then pour over chocolate. Stir until smooth.
- Pour chocolate filling into tart shell. Sprinkle with sea salt.
- Chill for at least 2 hours before serving.

- Chilling the dough prevents shrinking during baking.
