Description

A light and airy chocolate soufflé with a refreshing hint of mint. Perfect for a decadent dessert.


Ingredients

Scale
  • 4 oz dark chocolate (70% cocoa), chopped
  • 3 tbsp unsalted butter
  • 1/4 cup granulated sugar
  • 3 large eggs, separated
  • 1 tsp mint extract
  • 1/4 tsp cream of tartar
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 375°F (190°C). Butter 4 ramekins and dust with sugar.
  2. Melt chocolate and butter in a double boiler, then let cool slightly.
  3. Whisk egg yolks with half the sugar until pale. Stir in melted chocolate and mint extract.
  4. Beat egg whites with cream of tartar until soft peaks form. Gradually add remaining sugar and beat until stiff.
  5. Fold egg whites into chocolate mixture in three batches.
  6. Divide batter into ramekins and smooth tops. Bake for 12-15 minutes until risen.
  7. Dust with powdered sugar and serve immediately.
