Description

Delicious chocolate cupcakes with a refreshing peppermint twist, perfect for holidays or any celebration.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 tbsp white vinegar
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1/2 cup crushed peppermint candies (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Whisk flour, cocoa powder, sugar, baking soda, and salt in a large bowl.
  3. Add water, oil, vinegar, vanilla, and peppermint extract. Mix until smooth.
  4. Fill cupcake liners 2/3 full with batter.
  5. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  6. Let cool completely before frosting.
  7. Top with your favorite frosting and crushed peppermint candies.

Notes

  • Store cupcakes in an airtight container at room temperature for up to 3 days.
  • For extra mint flavor, add a few drops of peppermint extract to your frosting.
