Ingredients

- 3 eggs, separated
- 50g sugar
- 200ml heavy cream

Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water.
- Whisk the egg yolks with half the sugar until pale and creamy.
- Fold the melted chocolate into the egg yolk mixture.
- Whip the heavy cream with vanilla extract until soft peaks form.
- In a separate bowl, whisk the egg whites with the remaining sugar until stiff peaks form.
- Gently fold the whipped cream and egg whites into the chocolate mixture.
- Divide the mousse into serving glasses and chill for at least 4 hours before serving.
