- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup strong brewed coffee, cooled
- 1/3 cup vegetable oil
- 1 tbsp white vinegar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
- Add coffee, vegetable oil, vinegar, and vanilla extract. Mix until smooth.
- Fill cupcake liners 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool completely before frosting.

- Use freshly brewed coffee for the best flavor.
- Let cupcakes cool before frosting to prevent melting.
