Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup strong brewed coffee, cooled
  • 1/3 cup vegetable oil
  • 1 tbsp white vinegar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
  3. Add coffee, vegetable oil, vinegar, and vanilla extract. Mix until smooth.
  4. Fill cupcake liners 2/3 full with the batter.
  5. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let cool completely before frosting.
