- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1 large egg
- 1/4 cup molasses
- 1 tsp vanilla extract
- 1/2 cup granulated sugar (for rolling)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together flour, cocoa powder, baking soda, ginger, cinnamon, cloves, and salt in a bowl.
- In another bowl, beat butter and brown sugar until creamy. Add egg, molasses, and vanilla, mixing well.
- Gradually add dry ingredients to the wet mixture, stirring until combined.
- Shape dough into 1-inch balls and roll in granulated sugar.
- Place balls 2 inches apart on baking sheets. Bake for 10-12 minutes.
- Let cookies cool on sheets for 5 minutes before transferring to a wire rack.
Notes
- Store in an airtight container for up to a week.
- For softer cookies, bake for 10 minutes.
- Chill dough for 30 minutes if too sticky.
