Description

Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup semisweet chocolate chips
  • 2 tbsp milk

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a saucepan, bring water and butter to a boil. Remove from heat and stir in flour until smooth.
  3. Beat in eggs one at a time until dough is glossy and smooth.
  4. Pipe dough into 4-inch logs on the baking sheet. Bake for 30 minutes until golden and puffed.
  5. Cool completely. Slice each eclair horizontally.
  6. Whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Fill eclairs with cream.
  7. Melt chocolate chips with milk and stir until smooth. Drizzle over eclairs.
  8. Chill for 30 minutes before serving.
